With Halloween swiftly approaching, and two little kids, our family is focused on all things pumpkins right now. We’ve been to many pumpkin farms over the past two weeks. We have pumpkins decorating the front porch. We’ve got pumpkins lining the dining room table. We have drawings of pumpkins by the girls on display. Basically, if it’s pumpkin we’re all about it.

I’m not a pumpkin pie fan myself but I do love pumpkin flavor in my food. Pumpkin bread, coffee, ravioli… are all deliciously amazing. So when I saw an email from Well Plated come across my inbox with the subject “The Pumpkin Recipes You’ve Been Dreaming Of!” I knew I was in for a treat.

As Erin at Well Plated promised, this cake is moist and flavorful. But the icing… oh my gosh grab me a spoon. I’m not a fan of super sugary frostings or food in general actually but this cream cheese icing has me hooked. Maybe it’s the Greek yogurt that balances it out? (Yes, Greek yogurt is an ingredient in the icing and is not a typo. It’s in the cake too!) I’m not sure what it is but regardless, it is a new favorite.

The cake itself, although not exactly healthy, does have some healthy upgrades that makes me feel like it’s not quite as unhealthy as other sweet options. Greek yogurt replaces some of the oil, honey instead of granulated sugar, and whole wheat flour replaces some of the white flour. I love the method of using healthier substitutes partially because it keeps the flavor from becoming too “healthy tasting” and no longer an appetizing treat.

This Pumpkin Sheet Cake is easy to make and as long as you have a can of pumpkin in the pantry (which I suggest you do every October / November.) This is a great last minute throw together option to bring to someone’s house. I followed the recipe exactly but added the candied walnuts as garnish for a little extra flare – I mean who doesn’t love flare on cake? I candied the walnuts myself but you can buy them at the store all ready to go too.
