We all have nights where we are craving something simple. Simple flavors, simple ingredients and simple to cook. Italian seasoned chicken breast is my go to recipe on those nights. It packs just the right balance of flavor while the tenderness of the chicken shines through. I typically serve this Italian seasoned chicken breast recipe with a simple baked potato and green vegetable and dinner is done in 30 minutes. 

About the Ingredients

This recipe has 2 key components: the chicken breasts and the Italian Seasoning. I mix up the seasoning in large batches and store it in an air-tight jar on my spice rack to use for lots of different recipes (like this Italian Beef Skillet Dinner) and salad dressings. The ingredients for the Italian seasoning are:

  • garlic powder
  • onion powder
  • oregano
  • pepper
  • thyme
  • basil
  • parsley
  • celery seed

Recipe Substitutions & Variations

This homemade Italian spice mix is useful in so many recipes. I use it for making tomato based sauces, homemade pizzas, seasoning breads and dipping olive oils and for making salad dressing. If you want to try your hand at a homemade Italian salad dressing simply add the following ingredients to a glass jar, tighten the lid and shake until combined:

  • 2 Tablespoons of homemade Italian Seasoning
  • 1/4 cup red wine vinegar
  • 2/3 cup salad oil
  • 2 Tablespoons water
  • 1 teaspoon sugar
  • 1/2 teaspoon salt

Another variation of Italian Seasoned Chicken Breast is to bread the chicken in a flour and egg dredge. Add the homemade Italian seasoning to the flour with a little salt. Then fry your cutlets.

How to Make Italian Seasoned Chicken Breast

First mix up the Italian Seasoning. Add all of your spices to a jar, close the lid and shake well.

Pat the chicken breast dry with a paper towel. Slice the chicken horizontally to create 2 thin pieces if the breasts aren’t already sliced thin. Sprinkle both sides of each piece liberally with Italian seasoning.

Spray a sheet pan with cooking spray and place the seasoned chicken on the pan. Bake the chicken in a preheated oven at 375 degrees for 25 minutes or until the chicken reaches 165 degrees internal temperature (time may vary based on the thickness of the chicken.) Remove the chicken to a cutting board and let cool for 3-5 minutes. Slice and serve!

FAQ’s and Recipe Tips

Use thin sliced chicken breasts. Full thickness chicken will take much longer than 30 minutes to cook.

Line your sheet pan with tin foil for easy clean-up. If you don’t want to deal with washing the sheet pan, cover it in tin foil. Spray the tin foil with cooking spray and follow the rest of the recipe.

Make extra for lunch the next day. This recipe is so easy to prepare and it hardly takes any additional effort to make extra portions. Add 2 additional chicken breasts to your tray so you can have leftovers for a salad or sandwich the next day.

  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tbsp oregano
  • 1 tsp thyme
  • 1 tsp basil
  • 1 tbsp parsley
  • ¼ tsp celery seed
  • 6 chicken breasts thin sliced
  • cooking spray


  • Preheat oven to 375°.
  • Combine ingredients from garlic powder through celery seed in a small jar. After securing the lid tightly, shake to thoroughly mix.
    1 tbsp garlic powder, 1 tbsp onion powder, 2 tbsp oregano, 1 tsp thyme, 1 tsp basil, 1 tbsp parsley, ¼ tsp celery seed
  • Spray a rimmed baking sheet with cooking spray. Place chicken breasts on baking sheet and season liberally with Italian Seasoning from the jar.

  • Bake chicken for 25 minutes or until chicken reaches an internal temperature of 165°. Let rest for 3-5 minutes before slicing.


This recipe makes a lot of seasoning, more than you will need for the chicken. Store extra in an air-tight jar at room temperature and use in place of store bought Italian Herb mixes.
