The fall tends to send me into mixed cravings for food. I’m still wishing it were summer and the BBQs were all fired up. On the other hand, I’m ready for a little comfort food and the cozy smell of something roasting in the oven. So what better to do than roast a little something with BBQ flare?

This BBQ Rub for Turkey Breast is the best summer meets fall recipe you’ll find. Bring out the flavors of summer by pairing it with classic barbecue sides like Broccoli Bacon Salad or BLT Pasta Salad. Or if you’re feeling more fall try Sweet Potato Pancakes to really play up the warm rich flavors of the turkey.

Regardless of if you’re leaning towards summer or fall, definitely go with a turkey breast rather than a full bird. The breast will cook in much less time and for a family dinner you’ll still have plenty of meat.

About the Ingredients

Boneless turkey breast – skin on and preferably in the 2-3 pound size.

For the rub – brown sugar, cumin, smoked paprika, sweet paprika, dry mustard, ground coriander, garlic powder, cayenne pepper and salt. Mixed in a small bowl or jar.

Butter – melted; to brush on the skin. The butter will give the skin that beautiful crispiness.

Beer – any beer will be good. Honestly, you could even use water or any broth or stock. The beer is really just for moisture and won’t noticeably change the flavor.

Make the Rub

Begin by mixing up the spice rub in a small bowl or mason jar.

Season the Turkey

Prepare the turkey breast by patting the skin dry with a paper towel. This will help the rub stick to the skin and keep it from gooping up (is that a word? you know what I mean!) Now you can sprinkle on the rub and use your finger tips to pat it on.

Prepare the Roasting Pan

Line a rimmed baking sheet with aluminum foil, for easier cleanup, and pour an entire beer onto the pan. Place a wire rack over the baking sheet and then the turkey breast on the center of the rack.

Brush the Skin

Melt a tablespoon of butter and using a basting brush, brush it all over the skin. Try to brush lightly so as not to remove the spice rub.

Roast the Turkey

Roast the turkey at 325°F for 70 minutes or until a thermometer inserted into the center of the breast reads 160°F. Remove the breast to a cutting board and tent it with foil to rest for 10 minutes. This will lock in the juices and also let the meat continue to cook to about 165°F.

Storage Recommendations

Turkey tends to dry out easily. The best way to prevent this from happening is to remove as much air as possible from the storage container. To do this I use a large ziploc bag. Fill the bag with the sliced turkey and then fold over the top portion of the bag to squeeze out excess air before sealing the bag. Refrigerate the turkey for up to 4 days.

  • 2½ lb boneless turkey breast

For The Rub:

  • 1 tbsp brown sugar
  • 1 tsp cumin

Notes

How to make pan gravy: The turkey breast has very little fat in it so likewise the juices probably wont have any fat to separate out. Pour the pan juices into a small sauce pan and add 2 tablespoons of butter. Whisk in 2 teaspoons of dijon mustard and 1 tsp of pure maple syrup (to compliment the BBQ flavors in the rub!) Simmer the gravy for 5-10 minutes as it thickens.
